Strawberry Banana Crepes

Just make these whole wheat crepes and last weeks "ice cream" and trickle with chocolate and sprinkle with powdered sugar! SO DELISH and ooooohhhh so healthy.

Ice Cream??

This is delicious. We made a big batch and kept it in the freezer. It freezes HARD so we leave it out for a bit so it comes out soft.

Pure:
1 banana
1 cup of strawberries
1/3 cup of almond milk

Dried Fruit

I have loved all this fruit going on sale for 77 cents a pound! I have been buying it in the truck loads to freeze and dry. My lovely momma has a dryer. I was SO excited to dry TONS of plums this year. They are my favorite dried, next to pears. They are awesome for food storage AND for when you need fruit and run out. We love to snack on them too.

Watermelon Popsicles



You kids will think these are SO COOL and you have to do virtually NOTHING. Just slice watermelon, cut it with a cookie cutter, stick it on a popsicle stick (i got 100 pkg at dollar tree) and put it on foil n plop it in the fridge!

I know it is a little late in the year. Remember for next time :)

Dessert Crepes

These are my fave...obviously. You (again) can put whatever you want in these. These two examples are my fruit syrup and frozen fruit with a little shake of powdered sugar.
This crepe has fat free, sugar free pistachio pudding.

Crepes

Crepes
2 eggs
1 Tbs sugar
1 cup flour
1 1/2 cup milk
1/2 tsp salt
Directions: Cook on med heat. Makes 10-12 8” crepes. The batter will be SUPER runny. That is the way it is supposed to be.
This is what it looks like when it is done.

Spray pan and then add about 1/4 cup batter. Roll it around until it coats the bottom. As you see it cooking around the edges, lift it up with a spatula and then flip.

They are like super soft/thin tortillas but YUMMIER.

Creamsicle Creations

Both the boys and I LOVE these. These are (now) what I sneak as treats during the day and the boys beg for them after dinner for their treat. They are a serious new fave. You have GOT to try these! I got this recipe from on of my friends Jami and just tweaked it a bit.

½ ripe banana, mashed
1 cup plain yogurt
1/3 can frozen orange juice concentrate
1 tsp vanilla

Directions: Mix together and pour molds. (I found that it was too much if they were too big so we like them in ice trays.) Freeze until hard.

Using a spoon drop into Ice Tray.
Place a piece of foil over the tray and using a sharp knife poke small lines over each hole. THEN, place Popsicle sticks through each hole. (you can find them at dollar tree).
Place in freezer until frozen hard. It is perfect size for both adults and children. I did make some bigger ones for me and my husband but it seemed too much, even for us. We preferred the smaller ones.

Healthy Tip

We are all gonna need to make treats at some point. If I make cookies I usually cook as many as I need and freeze the rest. That way when I want a treat I can take them out of the freezer. They are already in rolls so I just cut off ONE and cook it. Then I put the roll back in the freezer. If I bake a whole thing of treats I EAT THEM ALL! I do the same with brownies except: you bake the brownies. Cut them into small squares and put them in freezer bags in the freezer. Then you can take them out one by one and warm them in the microwave. They are still as good as ever.

Yogurt Fruit Salad

I think this is my all time FAVE!! I got this recipe here 30 Day Gourmet.com I have been making LOTS of meals to stick in my freezer for convenience. This one is SO good and SO easy. They are only 61 Calories and only 2.2% is from fat! That is unbelievable. You can find the rest of the nutritional info on the website.

Ingredients:
3 Bananas
24 oz Nonfat Strawberry Yogurt
16 oz Frozen Sliced Strawberries slightly thawed and undrained
8 oz can Crushed Pineapple in juice and undrained

Slice banana's and place in large mixing bowl. Stir in remaining ingredients.

Spoon into paper lined muffin tins. (Not just the liners but the actual pan with the liners so they hold their shape...I didn't do that....and I regret it....Oops!)

Freeze until firm 3 hrs OR you can serve soft. Remove frozen cups from freezer and put in a freezer bag.

To eat:
Remove from freezer and let stand for 10 minutes. You want these slushy and not completely thawed. (you can even microwave for 15 seconds to soften)

These are awesome for snacks for you or the kiddos they are SO delicious!
